What We Eat

Week of May 16th:
  • Sunday: Indian Red Chicken Curry with Naan.  Oh yum.  It was so good, and I didn't make it too spicy so the kids ate it also.  We will be having this again!!
  • Monday: Grilled Salmon, Sourdough and Corn on the cob.  Yum.
  • Tuesday: Beef Ranchero and Green Beans.  A family favorite that we haven't had in forever... because of the beef.  I made it with grass-fed, organic beef and it was fabulous!
  • Wednesday: Chickpea burgers with Yogert Sauce, and big salads.  This was a big fail.  Noone liked it!
  • Thursday: Baked Chicken and Roasted Tomatoes, Packet noodles and Broccoli

Week of May 9th:
  • Sunday: Mother's Day, we had Rudy's BBQ!
  • Monday: Eggplant Parmesan and Spinach Salad
  • Tuesday: Breaded Atlantic Cod, Roasted Potatoes and Brocolli
  • Wednesday: Leftovers!
  • Thursday:  Grilled Chicken Sausages, Black beans and Butternut Squash
  • Friday:  Homemade Pizza and Salad
  • Saturday:  End of soccer season party.
Week of May 2nd:  Back at it!
  • Sunday:  Babysitter!  I went out with my lovely husband!
  • Monday: Spagetti with Turkey Meatballs.  Kids love my meatballs (thank goodness, because they are not a fan of pasta in general).  We had big salads and fruit in addition.
  • Tuesday:  Grilled chicken drummets, plain for the kids and spicy for the adults.  Asperagus and Quinoa, also.
  • Wednesday: Shirmp Scampi Ann, white rice and green beans
  • Thursday: Ricotta Gnocchi with Vodka Sauce and Sald
  • Friday:  We must have gone out, I totally can't remember!
  • Saturday: Chicken Fajita Tacos, Black Beans and Fruit 
Week of April 25th:
I was out of town nearly this whole week, but I know that my hubby did feed the kids pretty well!

 
  
Week of April 18th:
  • Sunday:  We went out to eat
  • Monday:  Baked Halibut with crunchy topping, Haricot Verts and Quinoa. This meal went over quite well.  The kids are opening up to quinoa, finially!  Also, everyone ate their fish with Tarter Sauce, which is a first.
  • Tuesday:  Homemade Shrimp Potstickers and Peanut noodles.  This meal was a hot mess.  I liked the peanut noodles, but they turned out too spicy for the kids.  The potstickers were WAY too briney.  I guess potstickers are just one thing that has to be veg or pork... there is no substitution!  Too bad, because they were a lot of work!
  • Wednesday:  stomach virus!
  • Thursday: ugh!
  • Friday: who knows what they are eating!
  • Saturday: nothing but BRAT.  Someone shoot me!
Week of April 11th:
  • Sunday: We went out to eat
  • Monday: Tuna Noodle Cassarole with Peas and Yellow Squash.  Yum for everyone!
  • Tuesday: Grilled Chicken, Butternut squash and white rice.  Crowd Pleaser.
  • Wednesday:  Out for Pre-School Fundraiser
  • Thursday: Pizza, fruit and big salads.  This was my Hubby-out-of-town for the 6th night desperation meal. 
  • Friday: Turkey burgers with Chipotle Sauce, homemade baked potato chips and salad.
  • Saturday: Grilled Salmon over white beans and roasted tomatoes, Haricot Verts.   
Week of April 4th:
  • Sunday: Easter!  Ham, Green Beans, Mashed Potatoes, Pink Salad and Flourless Chocolate Cake.
  • Monday:  Leftovers from Easter
  • Tuesday:  Yellow Curry with Chicken and Veggies over Brown Rice. Kids had more leftovers and the rice.
  • Wednesday:  Grilled Shrimp and Artichokes with Chipolte Aioli. Mashed Potato Cakes. Bigtime hit with the kids. They love love love Artichokes!
  • Thursday:  Roast Chicken Breasts with Garbanzo Beans, Tomatoes and Paprika, Cauliflower.  Everyone likes this, though each different parts.  I took pictures, because this recipe is so easy/good.  I will blog it soon!
  • Friday: Fish Tacos and Black Beans
  • Saturday:Leftover Garbanzo Beans and Tomotoes.  Scrambled eggs for the kids.
Week of March 28th:
  • Sunday: Homemade Chile Rellenos, Black Beans and Guacamole. Kids ate leftover fajita tacos from Friday, tomatoes and fruit. The Rellenos were wonderful, well worth the effort!
  • Monday: Chicken Marsala over whole wheat pasta and Zucchini. Kids ate everything. Son even had some of the sauce for dipping!
  • Tuesday: Sonoran Scampi What a mess!
  • Wednesday: Grilled Sockeye Salmon, Brown Rice and Green Beans. Kids love this meal! Ate everything plus blueberries.
  • Thursday: Vegetarian Lasagna and Salad. Kids ate Lasagna begrudgingly, with addition of yogurt and berries.
  • Friday: Breaded Cod Fillets, Roasted Potatoes, salad and fruit.  Had to fight the kids to eat the fish... which is strange because they have eaten it well in the past.  Maybe tired?
  • Saturday: Date-Night!
